It’s BBQ season!  With the upcoming long weekend, I wanted to share this super easy and amazingly delicious greek marinade recipe for grilled chicken.

A couple of Sundays ago we weren’t feeling our regular Sunday dinner, so we decided to deviate.  Having just stocked up on a ton of chicken breast that was on sale, and also having a serious craving to put tzatziki on anything, I figured some grilled chicken was in order.  The ingredients are simple and staples in a lot of our fridges and cupboards.

What Should I Serve it With?

We enjoyed serving the chicken with a cucumber-tomato salad and Skinnytaste’s Yellow Rice (and of course lots of tzatziki!).  If you’re grilling for a crowd, my favourite pasta salad would also be a fantastic side.

Ingredients

Instructions
  1. Rinse and dry chicken breast
  2. Whisk together all ingredients, except onion
  3. Place chicken in a large freezer bag, add onion and pour in marinade
  4. Seal bag and mix the chicken with the marinade
  5. Place the chicken in the fridge to marinade for at least 4 hours
  6. After marinating, grill chicken about 10 minutes per side*

* This is an average cooking time.  Larger pieces may require longer grilling times to ensure the chicken is thoroughly cooked (165°F).  Never consume raw or undercooked meat.
