Happy Thanksgiving (Danielle made me take out the “Y’all” here, just so you know)! No, I’m not confused, I’m Canadian, and this weekend is our Thanksgiving.

Today on the blog I wanted to share this easy Apple Crumble Pie I made recently.  This recipe is super easy and foolproof. I used a ready-to-bake pie shell for the base and found 2 really easy recipes to make the filling and topping. It turned out so well that Chris even said it tasted store-bought (that’s a good compliment in his books)!

One thing you should know about me is that I come from a long line of naturally gifted bakers! I myself, not so much, but I try hard and about 50% of the time I succeed. It was my grandma who instilled her love and talent for baking in all of us. Two of my favourite recipes from her kitchen were her mac & cheese and her apple pie. Although the pie I’m sharing today isn’t her recipe, it still very much reminds me of her. In fact, if she saw what I was making she’d probably say, “Now if I was doing this, I’d do it this way,” with her loving smile and I’d have to stop whatever I’d be doing and start doing it her way.

Ingredients

Instructions
  1. Core, peel and slice all the apples
  2. In a large sautee pan melt butter
  3. Add sugars to the pan and cook until sugars dissolve (approximately 2 minutes)
  4. Add apples, lemon juice, cinnamon & nutmeg. Reduce heat, cover and let cook for approximately 20 minutes, until apples are soft
  5. Remove from heat and allow filling to cool to room temperature
  6. Preheat oven to 350 degrees fahrenheit
  7. When the filling has cooled, prepare the ready-to-bake pie shell according to package directions. I placed my shell in a pyrex dish as the pie will get quite heavy once filled
  8. In a large mixing bowl add brown sugar, flour, oats & cinnamon and mix well
  9. Cut chilled butter into small cubes
  10. Using a pastry blender, 2 knives or your fingers, cut butter into the rest of the ingredients until it is well mixed and the butter is no larger than the size of a pea
  11. Pour filling into prepared pie shell
  12. Sprinkle topping over the top of the filling until it is completely covered
  13. Bake for approximately 25 minutes
